Back in the day before I had kids and before Pinterest was around, I used to clip recipes from magazines and put them in a 3 ring binder. I am sure many of you have similar “cookbooks” hanging around. It’s funny how rarely I refer to these now. But I had been craving Key Lime Pie and remembered that I had a really simple Key Lime Pie recipe from the back of the graham cracker crust label from back in the day. So, I dusted off the old binder and pulled out the simple 5-Minute Key Lime Pie recipe. But instead of making an entire pie, I opted to make change the recipe up a bit to make a Key Lime Pie in a Jar.
Because anything in a mason jar just adds another level of charm am-I-right?
To make this easy and light summertime dessert, you just need a few ingredients and a few minutes. I shared this Citrus & Hydrangea centerpiece as part of my virtual progressive dinner a few weeks back. This Key Lime Pie in a Mason Jar goes perfect with that flower arrangement and would certainly be a fun dessert to serve at a casual get together.
1 box sugar free lime jello
1/4 cup boiling water
2 8oz containers of lime yogurt
8 oz fat free cool whip
Box of graham crackers or low fat graham cracker crust
Dissolve Jello in boiling water. Cool Slightly.
Stir in Yogurt.
Fold in Cool Whip. (I saved about 1/3 portion of the cool whip to layer on top)
Crush graham crackers and place at bottom of the jar.
Pour the jello mix over the graham crackers and chill for 4 hours.
Layer cool whip on top of the jello mix.
Garnish as desired. (I used a lime wedge.)
Store in refrigerator.
