Chicken and Avocado Chopped Salad Recipe

Good morning friends! I’m back today with more inspiration to help with some inspiration for your fitness journey.  If you are just checking in, this week I am in a healthy state of mind and sharing a few tips and tricks for how I am sticking with my fitness goals. Because let’s face it- it’s hard to stay on track with so many distractions and reasons to get sidetracked! (Did someone say margaritas?)  Today I am sharing a Chicken and Avocado Salad recipe idea that I love to throw together for lunch. Although, I feel bad even calling it a “recipe” because it is more like “throw some stuff in a bowl and call it a day.” 

As a stay at home mom, lunches can be a total snooze fest and drag. Unless you’ve spent time meal prepping or plan to grab lunch out, many days you will find yourself eating a peanut butter and jelly or whatever leftover mac & cheese you can find in the fridge from the kids dinner the night before. Not exactly doing yourself any favors with this plan am-I-right?

If you love avocados, this quick little lunch is perfect for you! 

Chicken and Avocado Salad Recipe Ingredients

  • Grilled Chicken Cubed
  • Cubed Avocado
  • Olive Oil
  • Squeezed Lime
  • Dash of Salt

Chicken and Avocado Salad Recipe Preparation

  • Combine the grilled chicken and avocado in a large bowl.
  • Add the olive oil and lime juice over the chicken-avocado mixture. 
  • Add a dash of salt.
  • Toss gently until everything is well coated.
  • Serve as a salad 

The salt and lime give this so much flavor and the chicken and avocado are filling. I have also seen this with a variation of adding cubed apples or you could add black beans or corn as well. If we are grilling chicken, I usually plan to grill two extra chicken breasts that I can eat off of throughout the week. This just takes a few minutes to assemble.

    Yum!! Chicken and avocado always go in my salads, but I never thought to leave out the lettuce and have them BE a salad. Thanks for the quick and easy recipe!!
