It’s hard to believe the holidays are here! I can already feel the hustle and bustle in the air and I have to admit I have that extra holiday pep in my step. I am chomping at the bit to get started on Christmas decorating but am making myself hold off until next week. (but I cannot deny that the Christmas tunes are already in rotation)
I won’t be cooking our Thanksgiving meal this year thanks to my in-laws who are graciously hosting. (THANK YOU!) Since they will be focusing on the main meal, I offered to prepare a Thanksgiving morning brunch to help take something off their plate so I thought I would share my plans with you in case you are also hosting a brunch.
I love any excuse to make one of my favorite breakfast recipes! I’m also thrilled to be able to use my new Nespresso machine. (More on that below- spoiler alert- it’s included in a big sale going on at Macy’s)
Oh, and of course, any excuse to use my letter board is a win for me! Isn’t that quote perfect for a Thanksgiving breakfast?
My friend made this Egg Strata recipe for The Big Sweet and I one Sunday Funday back before we had kids and it has remained our favorite all of these years. I’m all about breakfast meals you can prep ahead of time and just take a few minutes to get ready the morning of! (I’m also all about recipes that you really can’t mess up.)
EGG STRATA RECIPE
This recipes serves roughly 6-8 people – using a 9 x 11 baking dish.
You can half it if you have less people- using a 8×8 baking dish.
Ingredients
Eggs
1/2 & 1/2
Peppers – what ever colors you like (approx 2 peppers)
Onion
Bacon
Baguette of french or sourdough bread (long skinny one so lots of crust)
Day/Night Before:
Brown bacon in skillet (or microwave/oven and chop up)
Cook chopped onion alone until translucent
Add chopped peppers
Combine bacon in and set this mixture aside
Break up bread in smaller chunks – place in casserole dish. Don’t fill it with bread but at least cover the bottom.
Combine eggs and 1/2 & 1/2. (Just eyeball it). For a full 9×12 use a dozen eggs and maybe 1/3 cup 1/2&1/2 in a bowl.
Now layer – you have the bread already, so add the bacon/onion/pepper mixture and then eggs. Mush it all around.
Cover with foil and put in fridge overnight.
As the bread soaks up the egg – you may need to add a bit more egg and 1/2 & 1/2 in the am before putting in oven.
350 degree oven for 45 minutes or so.
I plan to serve cinnamon rolls, fresh fruit, blueberry muffins, orange juice and yogurt with this casserole. That should hold us over until we eat the turkey, right? 🙂
