Egg Omelet Muffin Recipe

Raise your hand if your mornings are chaotic.

Yeah, that is what I figured! No matter how much I prep at night for the next day, mornings still have a way of throwing so many curve balls. Whether it’s last minute wardrobe changes, hissy fits or maybe just extra snuggles needed, most mornings are just chaos. (And what’s the deal with kids and their misplaced shoes?)

Some mornings we manage to get a peaceful and nutritional breakfast but most mornings end up with me scooping up bags and jackets and sippy cups and then chasing them into the car.

So, this mama was hungry.  Somehow amidst the chaos I would pretty much forget to feed myself. So I decided to make these Omelet Egg Muffins for an on-the-go portable breakfast. These are easy peasy and exactly what I need to grab in the morning along with my coffee. (which by the way is cold by the time I find the missing shoe but that is another topic)  I made a batch and was able to just warm them up in the morning and figured I would share so you could try this too!

EGG OMELET MUFFIN RECIPE

Ingredients:

  • 8 the happy egg co. Eggs
  • Ground Sausage or Diced Ham
  • 1/2 Cup Diced Red Bell Pepper
  • 1/8 Teaspoon Pepper
  • ⅔ Cup Shredded Cheddar Cheese

STEPS:

  1. Preheat oven to 350F and coat a muffin tin or line with paper liners.
  2. Whisk eggs together in a large bowl.
  3. Add browned sausage or diced ham, diced pepper,  and black pepper.
  4. Pour egg mixture evenly into prepared muffin cups.
  5. Bake in the preheated oven until muffins are set in the middle, 20-25 minutes.
  6. Allow to cool then remove from pan.
  7. To reheat, pop in the microwave 45 seconds to 1 minute.

I think I could have fun mixing up the ingredients with all different kinds of options- spinach, pimento cheese, bacon, sweet potatoes, mushrooms. I think the options are endless.

I loved using happy egg co. eggs for this recipe because I am always looking for easy ways to feed my family better. These eggs are the gold standard in hen welfare and the first commercial free range egg producer to be certified by the American Humane Association ™.

Their eggs were absolutely beautiful and since we won’t be adding a chicken coop any time soon I am so happy to have found these. The eggs are produced by free to roam hens raised on family run free range  farms and never use hormones. These eggs were not only beautiful to look at, but they also did taste amazing. The best part is that I got these at my local Walmart.

Now off to reheat my coffee…

    I love this recipe! my sister and I use it all the time. My favorite is tomato (or salsa) with spinach onion and bacon.
