Happy MONDAY! If you follow me on Instagram then you already know sissy and I had a wonderful girls weekend getaway in Asheville. It was so great to spend time just the two of us, and even better with no agenda! I will be back soon with a weekend recap- so many pictures to sort through. Today let’s talk about meal train ideas and why this is such a wonderful concept.
If your friend just had a baby, or your co-worker just had surgery or is dealing with sickness. Or maybe you have a new neighbor that you want to welcome to the neighborhood. We all know how helpful it can be to give a meal.
So I have a suggestion for a meal to make them! Recently, THREE of my friends had babies all within about 10 days of each other and I figured I would do a little meal train action for them. Since there were three families to feed, I figured it would be easiest to knock them all out together and go ahead and include myself so needed to come up with a way to make 4 meals easily.
Enter Sheet Pan Fajitas.
Meal Train Ideas- Sheet Pan Fajitas
I am pretty new to the whole sheet pan meal prep but let me tell you something- I AM SOLD. I actually made this recipe for my family a few weeks ago and was blown away by how good it tasted. For mine, I used this recipe from All Recipes, but there are lots of good ones out there.
What I love most about this way to cook is that you can put in the oven and walk away. I have always made my fajitas in the skillet which means I have to stand there and tend to them, and it really doesn’t make very much food at one time.
Using this method, I was able to cook 4 meals with two sheet pans all at once.
Sheet Pan Fajitas Meal Train Ideas- Items Needed
For the whole meal delivery kit, here is what I included:
- Prepared Chicken Fajitas (chicken, bell peppers and onions)
- Sour Cream
- Salsa
- Shredded Cheese
- Diced Tomatoes
- Shredded Lettuce
- Guacamole
- Tortillas
- Bag of Tortilla Chips
- Hard Tacos (optional)
- Vanilla Oreos in the yellow packaging (NOT OPTIONAL :))
After I prepared this set up for all three friends, I thought how perfect it would have been if I also cooked up some ground beef with taco seasoning to include with the meal. Since I was already giving them all of the toppings for a fajita bar, adding the ground beef could have easily become a second meal for them. Then any leftovers could become quesadillas. I will definitely plan to provide both types of meat next time!
I remember those first few weeks with a newborn and how much I appreciated a meal delivered. It really is such a strange and amazing time of your life! That is why the meal train ideas are so perfect for anyone who could use a meal!
Here’s to new babies… and guacamole!
xoxo-

Great idea for a meal train or my dinner this week! I love the idea for adding in extras so they can stretch the leftovers.
