Happy Taco Tuesday my amigas! If you are new around here- this is a fun series where we taco ’bout all things TACOS and it’s been fun to share some of my favorite go-to Mexican recipes with you. You can catch up on all Taco Tueday past posts HERE. Today it’s not really a “recipe” but more about how to share the taco love.
Last fall, we had a tragedy at our school and everyone did all they could do pitch in and help out the families impacted. One small gesture was to form a meal train and provide the families with dinners. I was so happy to be able to sign up and help in a small way!
Now it was time to come up with a family friendly and kid-approved meal. I was a bit crunched on time since it ended up being a busy couple days leading up to it. I was also a bit stuck as there were some specifics given that the family didn’t like or prefer. So I decided to do a taco bar- because who doesn’t love a taco bar am-i-right?!?! The hope is that there is something for everyone to enjoy! While this isn’t fancy or really anything special- I do think any dinner is helpful. A dropped off dinner is one that the mother doesn’t have to think about, buy for or prepare. Even if it’s just a bunch of store bought items! I like to give a variety of things so that this can all be heated up for leftovers and used in various ways.
So I made a list of everything I would want in a taco bar and went to town! It included:
- Taco Meat
- Mexican Rice
- Chicken Tortilla Soup
- Diced Tomatoes
- Fresh Fajita Veggies for sautéing
- Refried Beans
- Tortillas
- Sour Cream
- Guacomole
- Salsa
- Shredded Cheese
- Shredded Lettuce
- Various Chips
- Key Lime Pudding (for a not-too-sweet dessert as the mother requested no sweets)
I almost didn’t share this idea here because it really wasn’t anything special. But I figured there are probably others in my same boat… someone who wants to help but is short on time. Someone who wants to help take the dinner load off of their friend. Especially a friend that loves TACOS.
