Summer held on as long as possible here in Atlanta and we were “treated” with a hot, humid and rainy week at the tail end! But then just when we literally could not take one more minute the skies turned blue and the temperatures turned crisp! And I am not being dramatic when I say when the rain clouds parted I literally went running into our kitchen to make the boys an after school treat of pumpkin muffins. I had picked up the two ingredients to make this fall treat and was just waiting for mother nature to get on board with some fall nesting. And today I am sharing this super simple recipe with you. I love this recipe because it is super simple! I also love it because while I wouldn’t call it healthy, it is definitely “healthier” since you use canned pumpkin instead of vegetable oil. The pumpkin also gives these muffins the perfect flavor and texture. You can easily keep these ingredients on hand to pull out any time you feel like nesting this fall or have last minute company.
PUMPKIN MUFFINS RECIPE
|| INGREDIENTS ||
1 box of yellow cake mix
1 15 oz can of pumpkin
|| DIRECTIONS||
Mix the two ingredients together.
Bake at 350 for 20-25 minutes.
This recipe made a perfect dozen. (And they literally lasted an afternoon.)
