Hey friends! It’s time for another Taco Tuesday recipe post. For those of you just joining, I kicked off a new series where we taco ’bout all of our favorite Mexican dishes. Turns out lots of us could live on chips and salsa. You are my people. Today’s post is an old favorite around here that I got from a friend when we lived in Chapel Hill 15 years ago. Because of that, we call this “KJ Salsa” named after her, but it is really a Black Bean & Corn Salsa recipe that is fresh and full of flavors and festive colors.
Black Bean & Corn Salsa
INGREDIENTS || Black Bean & Corn Salsa
INSTRUCTIONS || Black Bean & Corn Salsa

Combine all of the ingredients in the first ingredient section.

Squeeze lime and add olive oil to blend ingredients together.
- Season to taste.
This makes a large batch and is great to snack off for a few days in the fridge.
