Happy Taco Tuesday my amigas! If you are new around here- this is a fun series where we taco ’bout all things TACOS. Today it’s all about a hearty and healthy winter option that I have been gobbling up- Mexican Cabbage Soup.
Last year I was in a total meal planning slump and on several different occasions people suggested that I use the cookbook “Defined Dish” for meal inspiration. So I ordered it and agree that there are tons of healthy options and they all sound absolutely delicious. I am looking forward to working my way through this cookbook and am challenging myself to try at least one new recipe a month. Baby steps, ok?

The first recipe I decided to try out was this Mexican Cabbage Soup. It just spoke to me during this cold January weather. Bonus points that it is super healthy! The author of this recipe even calls this “detox” soup– sounds like a great January dinner plan to me!
You can find this recipe in her cookbook or a variation of it on her website HERE. I added a pound of ground beef and a diced green pepper to really make this a hearty dinner meal for us. And because I like things with a little extra kick- I added some Texas Pete Pepper Sauce to my soup.
